The golden child of Appalachian foraging, ramps are highly valued for their sweet allium flavor. Also known as wild leeks, ramps are a spring ephemeral and are only in season for a couple weeks before they begin to turn yellow and recede back into the forest floor.
Ramps are an allium, and their flavor lies somewhere between garlic, chives, and onions. They can be eaten raw, sauteed, made into a pesto, or used as an onion replacement in any recipe.
Ramp foraging requires conscientious and considerate care to ensure the longevity of the patch. These were harvested in Montgomery County, VA, using sustainable methods of only taking 1 leaf per plant and leaving the bulbs. They were foraged by the same farmers who grow your food.
