We froze whole tomatoes at their peak freshness this season. You can cook down frozen tomatoes for sauces to get a taste of summer all season long. Rinse after thawing. Once thawed, a large proportion of the water in the tomatoes will separate out for you to pour off, making cooking down faster than with fresh tomatoes.
